NJC WAFFLE RECIPE

Liquid Ingredients​​

1 stick Unsalted Butter (8 Tbsp)

2 XL Eggs

1 3/4 cup Oat milk

1/4 cup Vermont Maple Syrup (Trader Joes)

2 teaspoons Alcohol-Free Vanilla Extract 

1 teaspoon Raw Honey 

Dry Ingredients

2 cups Flour

4 Graham Crackers crushed

1/4 cup Cane Sugar

1 Tablespoon Baking Powder

Tools

Large Mixing Bowl

Steel bowl to heat butter

Whisk

Measuring cup (2 Cups)

Silicone Spatula

Large Cookie Scoop 2.48 inch

Cooking Spray  (Optional)

Servings

12 - 16 Waffles

​Using a 4 square waffle maker​

STEP 1

Let's let our unsalted butter brown partially in a steel bowl at 400 degrees for 6 mins in a oven. (oven times vary)

STEP 4

Add some of that Maple Syrup we have over there to the Oat milk so that you get 2 cups.

Stir it up.

STEP 2

Grab 2 eggs and leave them out so they reach room temp.

STEP 5

Next, we crack our eggs and drop them in the butter. Add the Vanilla Extract and Raw Honey as well and then whisk away for 15 seconds.

NOTE

We can either make the dry ingredients after or chill back for an hour untill the butter cools down.

STEP 6

While continuing to whisk for another 30 seconds, slowly pour in the Oat milk mixture

and then let it sit.

STEP 3

We have decided to chill back play some uno and continue with the liquid ingredients and pour 1 3/4 cup oat milk in a measuring cup.

STEP 7

We will preheat our waffle iron at this point, and clean the whisk off.

STEP 8

Grab that large mixing bowl and put the Flour, Cane sugar, Baking powder, and Crushed graham crackers in there and whisk away for 10 seconds.

STEP 12

Get a large ice cream scoop and put 1 scoop for each waffle square on the iron.

STEP 9

Reach over and get that liquid mixture for us. Pour it in the large mixing bowl with the dry ingredients.

STEP 13

It should take 3 minutes, but we will take a peak at 2 minutes and 30 seconds. If it looks golden brown then use a spatula to slide under and lift the waffles onto a cooling rack. Or just put on a plate if you want them hot.

STEP 10

Whisk it up until combined thoroughly leaving zero lumps of flour. Graham lumps are fine.

STEP 14

We can save the rest for another day in a freezer bag and take out for later.

STEP 11

Our waffle iron should be preheated, so get the cooking spray and coat both sides lightly.

ENJOY!

These can be eaten on the go without syrup, if going to work etc. Work would likely have a microwave not a toaster. These waffles taste better microwaved so have fun!!

FULL RECIPE WITH EXTRA DETAILS

1. Let's melt our unsalted butter or let it brown partially. (There's many ways this can be done, but let's be lazy together and put that bowl which will eventually contain all the liquid ingredients in a small oven to melt at 400 degrees for 6 mins to partially brown. 3 mins if you just want it to melt. We let it cool down till it's solidified or liquified, either way same delicious results from my own experience.)

2. Grab 2 eggs and leave out so they reach room temp.

 

Note. We can either make the dry ingredients after or chill back till the butter cools down. (Give the butter about an hour or so for it to solidify a bit)

3. We have decided chill back play some uno and then continue with the liquid ingredients.  Pour 1 3/4 cup oat milk in a measuring cup.

4. Add some of that Maple Syrup we have over there to the Oat milk so that you get 2 cups. (Come here for a second...If you are like me and don't like to drench your waffles in syrup and or want it on the go, that's why we add syrup)

5. Next, we crack our eggs and drop them in the butter. Add the Vanilla Extract and Raw Honey as well and then whisk away for 15 seconds.

6. While continuing to whisk for another 30 seconds, slowly pour in the Oat milk mixture simultaneously and then let it sit.

7. We will preheat our waffle iron at this point.

8. Grab that large mixing bowl and put the flour, Cane Sugar, Baking powder, and crushed graham crackers in there and whisk away for 10 seconds.

9. Reach over get that liquid mixture for us. Pour it in the large mixing bowl with the dry ingredients.

10. Whisk it up until combined thoroughly. (Some may say don't whisk it too much and leave lumps. I keep going till there isn't any pockets of flour.)

11. Our waffle iron should be preheated, so get the cooking spray and coat both sides lightly.

12. Get a large ice cream scoop and put 1 scoop for each waffle square on the iron. (We have to do it quick so both sides cook as evenly as possible top and bottom)

13. It should take 3 minutes, but we will take a peak at 2 minutes and 30 seconds. If it looks golden brown then use a spatula to slide under and lift the waffles onto a cooling rack. Or just put on a plate if you want them hot.

14. We can save the rest for another day in a freezer bag and take out for later.
